Aglio E Olio Pasta
Cook Time: 20 minutes
Ingredients:
1 lb dried spaghetti (450 grams)
1/3 Cup olive oil
6 to 8 garlic cloves, thinly sliced or diced
1/2 teaspoon red pepper flakes
optional garnishes: chopped fresh parsley, freshly grated parmesan
Instructions:
Cook the Spaghetti. Bring a large pot of generously salted water to a boil. Add spaghetti and cook until nearly al dente.
Sauté the Garlic. While the spaghetti is coming to a boil (about 3 minutes after the pasta has been added to the boiling water) heat the olive oil in a pan over medium heat. Add the sliced or diced garlic and crushed red pepper flakes and sauté for 3 to 5 minutes or until they're lightly golden.
Toss the pasta in the sauce while the pasta is still hot. Transfer the pasta with tongs to the pan along with a 1/2 cup of hot starchy pasta water. Toss the pasta continuously until it is evenly coated in garlic sauce. If the sauce looks dry, add another 1/4 cup of starchy pasta water.
Taste and season. Give the pasta a quick taste and add salt or crushed red pepper flakes if needed.
Serve. Add any garnishes or additional toppings to your liking.
