Soup/Broth Ingredients:
5 cups water
5 teaspoons instant dashi granules (generally 1 packet)
2 tablespoons dark soy sauce
2 tablespoons light soy sauce
Substitute with 3 tablespoons regular soy sauce if you don't have light and dark
1 tablespoon sugar
2 tablespoons mirin
2 portions udon noodles
1/4 cup green onions, thinly sliced
Seven spice mixture (optional)
Beef Marinate Ingredients:
300 g beef (shabu shabu beef - belly cut, chuck, ribeye)
Note: 1 lb = 453.592 lb
1 tablespoon soy sauce
2 tablespoons mirin
2 teaspoons oyster sauce
2 teaspoon light brown sugar
1 teaspoon grated ginger or ginger paste
100 ml water
1/2 yellow onion
1 teaspoon salt
Optional: You can also get frozen packet tempura, which is nice and easy to make. All you do is bake the tempura in the convection toaster oven for 18-20 minutes at 400 F. You can put these in the oven after setting up a pot to make your udon broth.
Recipe:
Pour 5 cups of water into a pot and bring the water almost to a boil.
Start by marinating the thinly sliced beef with all of the beef marinate ingredients besides the salt and the onion. Set aside the marinated beef with a timer for 10 minutes.
While the meat is marinating, cut the yellow onion, add the salt, and mix thoroughly. Set aside until the beef is ready to cook.
Thinly slice the 1/4 cup green onions
Add all of the soup/broth ingredients besides the udon and stir everything together. Once the udon broth is properly mixed and almost boiling, add the portions of udon to the soup and cook the noodles for 10 minutes.
Heat a pan on medium and add 1 tsp beef fat or cooking oil and add the salted onion. Fry until softened.
Once the onions have softened, pour the beef and marinade and fry until the meat has been cooked through. Remove the beef and onions from the heat after they're cooked.
Plate the udon: Use tongs to place the noodles inside a bowl and add the broth. Place the beef on top of the noodles and add the green onions. Don't forget the tempura in the convection toaster oven.
